Bettelmat

A rarely found cheese made with cow's milk, similar in ways to Fontina. It has a peculiar yellow paste which comes from the mattolina that grows wild in the meadows and is part of the diet of the cows. It is made in shepherd's huts called malghe in the mountains of Piedmont, near the border with Switzerland in the Formazza Alps. Bettelmat is a cheese with a unique flavour and with a long aftertaste.
