Belle de Fontenay is a long, pale, yellow-skinned potato with very yellow flesh, smooth and creamy. It has fine-grained flesh which keeps its flavour when cooked. It is a versatile potato which can be steamed or boiled, served hot or cold, used in stews or salads.
