A variety of sharply flavoured, spicy sauces for serving with barbecued foods. They can consist of tomato purée mixed with meat juices, horseradish, concentrated juice of garlic and onions, mustard or chilli powder, paprika or cayenne pepper, vinegars, Worcestershire sauce or chilli sauces.
