A small, soft cheese made with goat's milk which has a white paste and natural rind. It is a farmhouse cheese made by Exmoor Blue Cheese in Somerset. This cheese is made with raw, whole milk and the curds are unpressed. It is made with vegetable rennet so is suitable for vegetarians. It may be found weighing from 275 g (10 oz) - 500 g (17 oz). Affinage is usually 4-8 weeks. Iit has a very goaty flavour.
