A cold dish made with beef and bacon minced (US: ground) seasoned with nutmeg and mace, bound with egg and breadcrumbs, rolled in a cloth and simmered in stock with vegetables. When it is cooked, it is removed, unwrapped, pressed and then glazed with aspic.
