A traditional winter dish of belly pork fried and served with a creamy purée of peas flavoured with herbs. It may be sprinkled with croûtons made with small cubes of belly pork rendered until they are crisp. This was originally food for the poor being made with ingredients they would have likely to have available. As in so many places this cuisine is gaining in popularity.
