Arracacia root. Peruvian carrot. Celery potato. A leguminous plant from South America. The starchy, tuberous rhizomes are brown-skinned and cylindrical with off-white flesh. They can be cooked in the same way as potatoes or sweet potatoes, or used in desserts. They are often ground to produce a flour similar to cassava. They are used widely throughout South America.
