Angelica is a tall plant of the cow parsley family, the green stem of which bears a likeness to celery in appearance and is crystallised and used in cakes and pastry creams. Young leaves can be used fresh in salads. The juice is used in Italian ice creams, vermouth and liqueurs such as Chartreuse and Bénédictine. It is also an alcoholic drink and Angelica.vermouth and liqueurs such as Chartreuse and Bénédictine, and is the basis for sève d’ angélique, a liqueur from the North of France. Very young stems are picked and filled with cream cheese.
