amandine

/ah-mahn-deen/
[French]

A paste of dried apricots pressed into a sheet used in Middle Eastern cuisine. It refers to a large variety of almond-based fancy pastries. It also means "with almonds", as in flaked, toasted almonds to garnish sweet or savoury dishes such as trout, green vegetables or rice. Sometimes incorrectly referred to as almondine.
