A large variety of almond-based fancy pastries. It also means "with almonds", as in flaked, toasted almonds to garnish sweet or savoury dishes such as trout, green vegetables or rice, or even just almond flavoured. It is also a paste of dried apricots pressed into a sheet. Sometimes incorrectly referred to as almondine.
