Altay(sky) (Syr)


A large wheel of hard cheese made with cow’s milk. It has a paste with medium-sized holes and a dry rind. It is industrially made with raw, whole milk and contains 50% fat (dry)/30% (total). The curds are uncooked and pressed. It may be found weighing from 12-20 kg (26-44 lb). Affinage is usually 6 months.
