The aitchbone is a cut of beef from the upper part of the leg, between the buttock and rump, including part of the pelvis. This is a low priced joint because of the high proportion of bone. May be boiled or braised. In North America the cut is across the pelvis and includes the rump and top and bottom round. It is also known as edgebone.
