Pastry shells. These could either be filled with savoury stuffings, such as creamed mushrooms or shellfish, or with custard or fruit.
Schnapps. Eau-de-vie. Broadly applied to all the principal indigenous spirits of the Scandinavian countries. This is a colourless, grain or potato based spirit. The best known brand in the world is Danish, but it is produced throughout Scandinavia. It is flavoured with cumin and aniseed or fennel. It should be served really very cold and is often drunk with beer before or after a meal.
"Snowball mushroom." Horse mushroom. Edible, and very delicious, but easily mistaken for other less palatable or even poisonous mushrooms.
Ptarmigan. For much of the year the ptarmigan is simlar to the red or willow grouse, with a touch of white on the wings. In winter both sexes become pure white (as does the willow grouse). However, its habitiat is quite different as it prefers barren, stony mountain slopes, usually higher up than the willow grouse.
