Blackfish. A solitary fish found mainly in the western Mediterranean of Cadíz and near the Azores and Madeira. The flesh is firm and white, as is often the case with deep sea fish, and cooks well by whatever method.
A popular sheep's milk cheese in northern Spain, from Navarre. It is hand-pressed, salted and smoked. This processing gives its rind a leathery appearance. Made from sheep’s milk, it is hard and has a sharp taste (PDO).
Ropa Vieja is a Cuban dish that consists of shredded beef, seasoned vegetables, and sauces served over white rice and black or red beans (Echarte). The name ropa vieja literally translates to English as “old clothes,” referring to the appearance of the meat and vegetables, which end up in strips that resemble old rags after they have been prepared.
