Montilla is a town and municipality of southern Spain, in the province of Córdoba in Andalucia well known for its olive oil production. It is even better known for the peculiar flavour of the eponymous pale dry light wine that gives its name to the sherry called Amontillado.

Montilla-Moriles is a DO wine zone near Cordoba in Andalucia producing both fortified and unfortified wines in the style of sherry, usually known simply as Montilla. The principal grape variety is the Pedro Ximenez which thrives in the hot climate.
