"Swiss enchilada." Soft tortillas filled with grilled cheese coated with enchilada sauce made with red peppers and baked.
A hard, strong, crumbly and dry, salty cheese made from skimmed cow or goat's milk, pressed and matured for up to 8 months and coated with chilli powder. It has a sharp flavour. The paste has a close-grained texture with a few small holes. It is similar to Feta when fresh and to Parmesan cheese when dried.
Saffron milk cap. It exudes milk when cut and is usually served fried or cold with a vinaigrette.
