"Testicles of the land." Truffle. If they are not described as the more precious white truffle, these will almost invariably be the dark, gnarled black truffle.

Aged in wood. New oak barrels impart a vanilla flavour to the wine. Sin crianza indicates that a wine has been aged in a vat rather than in a barrel.

Sieve. This is a fine sieve of wide diameter, round and with a flat bottom.

Crunchy. Brittle. Crisp.

Croquettes. These may be made with any of a number of ingredients, minced (US: ground) or finely chopped, bound with béchamel sauce, dipped in flour, egg and breadcrumbs and deep fried. They are a popular tapa.
