Naan bread. A leavened flatbread cooked in a tandoor and made from white wheat flour, yoghurt, egg and butter and baked in a tandoor. The baker is called the naanbai.
One website describes this as Persian fairy floss and, when we ate this at Moro, we were told that it was saffron candyfloss (US: cotton candy). It is spun sugar and may be flavoured in various ways.
