"Black wood ear." Judas's ear fungus, often found dried. Dried or fresh they should not be fried, as they explode, but stewed with other ingredients.
Black-tailed godwit, A tall wader with a long, straight bill. It has a broad white wing bar and a bold black band on a snow white tail. Eaten in the same way as woodcock.
"Flower mushroom." A high grade shiitake mushroom produced in cold conditions, which may be grilled or used in soups and stews. In Russia they are frequently pickled.
Grisette. A slender mushroom of the amanite family with a pale grey, ribbed cap, mild scent and flavour. It must be eaten well cooked or it will cause gastro -intestinal problems.
