A relish made from roasted red peppers and aubergines (US: eggplants) peeled and puréed, peeled and ground with garlic, olive oil and, occasionally paprika. May be served either as an appetiser or as a side dish in Macedonia or in the former Yugoslavia. Some very hot versions area available.
