Pickled vegetables. Pickling is so predominant that the word for vegetables is actually used to represent pickled vegetables. They are eaten every day, for every meal. It generally includes cabbage, ginger, garlic and red peppers. This should more properly be called gimchi, but knowledge of this dish was widespread in the West before the Korean government changed the romanisation in around the year 2000.
