An Indian variety of mangosteen, the principle ingredient of a cooling drink called kokum sherbet. It is a sour, fruit-flavoured, plum-like, deep purple-coloured fruit which is pitted and dried.
Bombay duck. A small fish native to Bombay, this is bommaloe macchi, the name of which the British found difficult to pronounce, hence "Bombay duck". It is dried and salted, impregnated with asafoetida and made into a crispy deep-fried fish starter or used as an accompaniment to curry. It is also used to flavour other dishes.
A fish very similar to the anchovy. Sometimes used to describe dried fish. These are marine fish not longer than 20 cm (8 inches) with a greenish-blue back and silver sides.
