A herb with a fern like pattern, and which has a numbing effect on the mouth. It is the bright green, newly formed leaf of the sansho (prickly ash) tree, and a herb much used by Japanese chefs. It has a light, minty flavour. It has, inevitably, a short season.

Silk bean curd. Soft bean curd with a delicate texture which is strained through a fine, sometimes silk, cloth before fermenting and then allowed to settle without pressing, which gives it a smooth pattern. It is almost the consistency of an egg custard.
