Truffle. If they are not described as the more precious white truffle, these will almost invariably be the dark, gnarled black truffle.
Yoghurt. Fermented milk treated with Lactobacillus bulgaricus. It can be used as a savoury or sweet product which differs depending on the milk, the fermentation and the culture.
Carob bean flour. The pulp from inside the bean is dried and ground into a powder which is used as a substitute for chocolate powder. Also known as St John's bread.
An oval fruit, originating in South America, which is up to 7.5 cm (3 inches) long and has granular whitish-green flesh which encloses a soft, seed-filled core. The green skin is inedible. Some say it has a flavour of guava or strawberry and pineapple but the ones I have eaten taste almost of pear drops.
