Pigeon pea. Otherwise known as red gram or yellow lentil. These and chickpeas (US: garbanzo beans) are the most important in India.
Fenugreek leaves. Both the leaves and seeds are used, in the same way as they are with coriander (US: cilantro). The flavour of the seeds is improved by light frying. The leaves are very small.
