Asian basil. Asian basil is slightly coarser than the sweet basil of Europe, and with a more robust aroma. It survives cooking in stews, adding a fresh menthol, camphor end of the spectrum.
Rue. A very bitter herb, best added to cooking and removed quite rapidly. The better part of its flavour is then imparted and the bitterness reduced.
Cumin seeds. The white seeds are commonly used. It is a musty smelling spice, the flavour of which is improved by roasting or frying.
Pomelo. A citrus fruit similar in appearance to a grapefruit with one slightly pointed end. Once the thick skin is peeled, the segments need to have the tough leathery coating pulled away. Inside, the flesh can be deliciously sweet and juicy. It is better left for a few days after picking before it is eaten. There are pink and white versions. Is sometimes used in salads and savoury dishes.
