Roselle. Jamaican sorrel. A 2 meter (6 ft) high plant producing peppery leaves with a flavour similar to sorrel. The small scarlet flowers are used to make jams (US: jellies) and jellies (US: jellos) or dried and used to colour foods.
Basella. One of the amaranths. This is a tropical climbing plant which can grow up to 2 meters (6 ft) in height. Basella alba, or Indian spinach, is the most common available in India. It has green leaves which are harvested as the plant grows and cooked in the same way as spinach or in oil with spices.
Pomphret, white or silver pomphret (US: pomfret). The white pomphret is slightly more of a delicacy than black or brown pomphret. The flesh falls away from the bones for easy eating.
Deep-fried unleavened whole wheat bread, similar to chapattis but smaller. Dry, unleavened bread usually made from wheat flour, salt and water, cooked on a tawa. Common in the North of India. They puff up when cooked.
A variety of the lablab bean which resembles a large pea pod, which produce dried brown beans with a white stripe.
Deep-fried wheat flour bread made from flour, salt and water, interlaced with butter and cooked in a tandoor or on a griddle, from the north of India.
