Boxthorn. A plant of the tomato family. It has small, oval leaves that are used to flavour Cantonese soups.
Saury. Skipper. Needlefish. A striking, beaked, marine fish up to 45 cm (1ft 6) long, known as skippers, as they leap from the sea to avoid fishing nets.
Louvar. The knowledgeable Peter Gonzalez of The Fishery in Pacific Beach called this the best eating fish he had ever come across, and he has eaten a few. The Louvar, which can grow up to 2 metres (6 feet) in length, has a stout oval-shaped body that tapers to a very slender caudal peduncle. It has a small mouth, and eyes that are positioned low on the head, almost directly behind the mouth. The body is metallic blue to silver grey and the fins are pink. It has dark spots on the upper two-thirds of the body. It lives its whole life in the open sea and is found in tropical and subtropical waters of all oceans, up to 500 feet deep in the water column. In Australia it is recorded from off northern to southern New South Wales. It is found in all Mexican waters, including the oceanic islands, with the exception of the Sea of Cortez where they are absent.

Flat lobster. A variety of lobster with a flat tail, shaped somewhat like a slipper, which is the edible part. It makes a noise like a cricket. The Mediterranean slipper lobster is generally used for flavouring soups as it does not carry much meat.
