Scad, jack or horse mackerel. The tough part near the tail must be removed before cooking. Fish which have a firm tail section and bright eyes are the ones to select. They are at their best from spring to autumn (US: fall). In Japan they are used for sashimi or sushi and may also be grilled, simmered or deep-fried.

Halvas is a sweet block made with semolina (US: cream of wheat), olive oil or butter, sugar, nuts and cinnamon powder or with tahini and sugar.
Carob bean. The fruit of a leguminous evergreen tree which grows in the eastern Mediterranean and which produces brown, leathery seed pods. The ripe seed pods contain an edible sweet gum or pulp, though the seeds are hard and inedible. The pulp is dried and ground into a powder resembling and used as a substitute for cocoa and chocolate powder.
