Fish fingers

"Flamed." Food which is set alight, usually after the addition of some warm alcohol, which is burned off in the process. This can be done to some effect at the table, as with crêpe Suzette, or in the kitchen as a finish to a sauce, for example.

Bouillon. Broth. Beef tea.

Meat glaze. A tasty savoury syrup, the result of several hours concentrated work, made from cooked down veal bones, beef, mushrooms and other vegetables, garlic, red and white wine, herbs and stock. It is used as an additive to intensify the flavour and depth of other dishes.
