Eisbock

"Ice beer." The production of this lager style beer is carried out at such low temperatures that some of the water freezes. Once the ice crystals are removed the concentration of alcohol is high at about 13%.

Eisbombe

A spherical mould which is lined with ice cream of one flavour, and has a rich filling of another flavour. Each layer is hardened before the next is added. The filling is generally made with eggs and cream flavoured with various fruits, liqueurs or candied fruits.

A name in southern Germany for Pfeffernüssen, spicy, hard, round domed biscuits (US: cookies) flavoured with mixed spice, traditionally with cloves and cinnamon with a touch of black pepper, and made with ground nuts. They are usually sprinkled with iciing sugar (US: powdered sugar).. They are commonly baked in the Netherlands as part of the Sinterklaas celebtrations on 5th December. In Germany they are found at Christmas time. They are so hard when first baked that they need to be dunked, but they often up in time.
