Grisette. A slender mushroom of the amanite family with a pale grey, ribbed cap, mild scent and flavour. It must be eaten well cooked or it will cause gastro -intestinal problems.
Woodcock. It is a very fine, pigeon-sized, game bird which inhabits boggy woodland and which is usually cooked undrawn, with only the gizzard removed. The trail, or entrails, are considered a great delicacy. A woodcock constitutes one portion. They are often served stuffed with their own gizzards or with the gizzards mashed for the sauce.
Pike-perch or zander. It is a river fish with delicate flavour. They can be differentiated from the perch by the relatively large space between their dorsal fins and their elongate, fusiform body, which is never so steeply arched behind the head as it is in the Perch. The flesh is firm and white with a stronger flavour than cod. It was introduced into the United Kingdom in the 70's and is in danger of wiping out native species of fish.
