Bangus or milkfish. A large, silver, bony fish popular in the South Pacific and Indian ocean. It has a delicate flavour, rather similar to whitefish, and has greenish-grey skin. It is cultivated in brackish fish ponds.
Spleen, usually of calf or beef. This is almost invariably minced (US: ground) and then sautéed and often spread on crostini. The taste is similar to that of chicken livers.
