"Small blue foot." Wood blewit. A bright lilac blue mushroom with fresh clean flavour and excellent with potatoes.
Elephant garlic or wild leek. A head of garlic having a large single clove and bearing more resemblance to a leek.
"Little red." A variety of wine grape used for making red wines. Used in the Valle d'Aosta in northern Italy.
Salted and boiled belly of pork and spare ribs, usually used in stews. Delicately pink and white. They are sold in larger pieces than rillons.
Small cabbage-shaped puffs made from choux pastry, stuffed with anchovy fillets minced (US: ground) with butter and the yolks of hard-boiled eggs, glazed with aspic, decorated with hard boiled eggs and truffles and topped with a slice of boiled lobster.
A soft, unsalted cream cheese which is used in desserts. It is log-shaped, wrapped in paper and has been made since 1850.
Poor cod. A small bony fish resembling smelt and treated in the same way as whiting.
