An appetiser, a bite-size snack, to stimulate the palate. It is usually quite salty in flavour. It is a slightly slang expression meaning "taste amuser". The more polite form is amuse-bouche.
"Pineapple in Créole style." Pineapple slices cooked in a kirsch-flavoured syrup, cut into circles with the centre scooped out. This is then filled with rice, custard apple, pineapple and banana. The whole concoction is served with angelica and poached bananas and a sauce flavoured with rum.
