Nigella. The small, black, bitter seeds of a relative of "love-in-a-mist". Nigella is often incorrectly called wild onion seed or black onion seed. The seeds have a sharp, pungent flavour with a hint of a smell of strawberries and are used for flavouring confectionary and liquors.

Fat

"Normandy fat." Pork fat and suet flavoured with herbs and aromatic vegetables. It is traditionally used in Normandy when cooking meat.

Small pieces of goose, duck and pork fat rendered down until they are crisp. Scratchings.

Big. Large.

A feast consisting of poached salt cod, boiled beef and mutton and stewed vegetables served with snails, hard boiled eggs and aïoli, a garlic mayonnaise, sometimes with breadcrumbs added, or cooked seaweed and Pernod.
