Gascony is the anglicised name for Gascogne, a region of France in the west, south of Bordeaux, and constituted a province of France prior to the French Revolution. Gascony is currently divided between the Aquitaine région (départements of Landes, Pyrénées-Atlantiques, south of Gironde, and south of Lot-et-Garonne) and the Midi-Pyrénées région (départements of Gers, Hautes-Pyrénées, southwest of Tarn-et-Garonne, and west of Haute-Garonne). Gascony was historically inhabited by Basque related people. It is home to the Gascon language. It is also the land of d'Artagnan, who inspired Alexandre Dumas' character in the Three Musketeers. Gascony has a long tradition of good food (Gascony is home to foie gras and Armagnac brandy).

Alewife. A migratory fish very similar to the herring, with silvery skin and strong flavour, abundant on the east coast of North America. It has a single spot on each side, behind the operculum and is deeper in the body than a herring. It is available smoked or pickled. The last stop on the Red Line of the Boston 'T' is Alewife, presumably indicating that a lot of these fish used to be landed in Boston.

A Provençal name for saury. Skipper. Needlefish. A striking, beaked, marine fish up to 45 cm (1ft 6) long, known as skippers, as they leap from the sea to avoid fishing nets.

A name for huss in southern France. This species of dogfish has a grey-brown skin with quite pronounced dark spots. Because of its relative similarity to a shark the coarse skin is usually removed by fishmongers. These fish grow to about 80 cm (32 inches) in length. The flesh is white or pinkish with a firm texture and good flavour. It is boneless. It is also commonly known as the spotted dogfish or nursehound or, in some places, as rock salmon or rock eel. Spurdog, smoothound and tope are all sold as huss. It is an excellent addition to soups because of its texture. It feeds on shellfish which flavours its own firm, white flesh.
