Cotes de Castillon, formerly known as Bordeaux Cotes de Castillon, is an area immediately east of St-Emilion in Bordeaux producing good value red wine in the Bordeaux region.
Côtes de Duras is an area south east of Bordeaux, on the borders of Lot-et-Garonne, Gironde and Dordogne, making Bordeaux style red and white, but predominantly red wines. Their AOC was acquired very early, in 1937.
Fronsac is a wine region of Bordeaux producing mainly red wines along the Dordogne and l'Isle rivers, west of Saint Émilion. Merlot is the predominant grape, with Cabernet Franc giving body and fruity richness to the wine. They generally age well.
"Pork cutlets in Gascon style." Pork cutlets browned in goose fat with parsley, cep mushrooms and garlic, baked in the oven. Just before they are finished white wine, pitted olives and stock are added. Served with potatoes.
"Pork chops in the style of Alsace." Pork chops with choucroute, Strasbourg sausage and boiled potatoes.
"Pork cutlets in the style of the Ardennes." Pork cutlets sautéed in butter with chopped onions and bacon, deglazed with white wine and simmered in demi-glace sauce with juniper berries.
"Pork cutlets in the style of the Auvergne." Pork cutlets braised with sautéed cabbage, topped with grated Parmesan cheese and breadcrumbs, baked au gratin.
