Banteng. A small ox domesticated and found in Burma, Thailand, Cambodia, Laos, Vietnam, Borneo, Java, and Bali. Used as a working beast, and for their meat.
A citrus fruit similar in appearance to a grapefruit with one slightly pointed end. Once the thick skin is peeled the segments need to have the tough leathery coating pulled away. Inside, the flesh can be deliciously sweet and juicy. It is better left for a few days after picking before it is eaten. There are pink and white versions. The peel is candied and eaten as a delicacy. This is one of my favourite fruits.
A kitchen implement with a wooden handle with a small sharp edged bowl at one end. It is used for scooping ball shapes from, particularly, melons but can also be used for other similarly textured foods such as cucumber. Larger ones are used for ice cream.
A drum of hard cheese made with goat's milk. It has a smooth paste and a natural, brine-washed rind. It is made by Highland Goat Products in Banffshire. This cheese is made with raw, whole milk and contains 49% fat (dry). The curds are pressed. It is made with vegetable rennet so is suitable for vegetarians. It may be found weighing from 1.8 - 2.7 kg (4-6 lb). The cheese is available with caraway seeds. Affinage is from 2 months to a year.
Chinese bellfower. A plant of the Campanula family indigenous to South East Asia. In Korea, where the root is often used in salads, gimchi and the like, it is more commonly found with white bells than with the blue bells found elsewhere.
