White sprouting broccoli is broccoli specially bred to produce shoots with white flowers. These tender shoots and stems make excellent eating, with a milder Brassica flavour than many of its relatives. I like it lightly steamed and dressed with olive oil and salt and even better when it has cooled down.
It is always thought that these are very young Stiltons which have not had the opportunity to become blue as they mature. In fact, they have simply had the mould omitted. The best ones have and interesting sourness to them, the worst have little flavour at all. (PDO).
Sussex hens come in brown, buff, red, speckled, silver, white and light. The light and white hens are the best layers and all make good eating. The Sussex is a very friendly, calm chicken.
A variety of Russian, yellow dual-purpose apple which appeared in Europe in the early 19th Century and reached the United States by 1870. The flavour is sharp and cooks to a cream purée. Not much loved in England. This very early-season apple is harvested from late July and has poor storage properties.
Silver ear fungus. A translucent white jelly fungus that grows on trees, used in Chinese cuisine.
A name for silver trevally, a white fish which is good to eat, caught around the southern coasts of Australia and Tasmania. The fillet has a noticeably red central muscle band. Confusingly, it is sometimes sold as silver bream.
Zedoary. This ginger/turmeric-like root with a flavour of unripe mango and ginger is available widely in India and Indonesia, where the leaves an shoots are also used, but hardly anywhere else. The root is dried and then ground into powder.
The white walnut is a variety of walnut native to North America, producing large, white edible meats which are high in fat. They are generally used in baking.
