The meat of deer or antelope. Deer which is shot in the wild in the UK has a season of July until the end of February. It is actually more complicated than that as the stag season is from 1st July to 20th October and the hinds from 21st October to 15th February. That is tomorrow as I am writing this on St Valentine's Day. Generally males and females do not live together but they do during the rut. At this time males are otherwise occupied and don’t eat, so the quality of the venison is poor. The carcasse should be well hung, for up to two weeks, to help tenderise it.

The Venus clams are many and various ranging from small to large in size. They colonise sandy ocean bottoms and populations are often both dense and large. They are triangular to rectangular in shape and generally have a porcelain like inner shell layer. The family includes over 400 known species. They are good to fling in handfuls into a pot to make soups or stews, but should be soaked before so doing.

verjuice

"Green juice." The juice of unripe, unfermented grapes, used for culinary purposes. Like lemon juice or vinegar, it is an acidulant, but it is much milder. Keeping verjuice in the bottle will have the same effect as for wine, although the acid flavour will not change. It is versatile and can be used effectively with fish, chicken or to cut fattier foods, or in vinaigrettes and dressings. It may also be made from crab apples or other unripe fruit.
