Alaskan pollack, a variety of pollack from the north west Pacific off Alaska. Pollacks are members of the cod family and weigh around 1 kg (2 lb). They have rather grey, flaky flesh and are often salted and dried or pickled and are also commonly used for making imitation shellfish foods. The salted roes are prized in Japan. Pollacks are also known as pollocks.
The snow pea or sugar pea is a type of plump, very sweet pea where the pod is eaten as well as the peas.
Asian pear. There are many varieties of this fruit. Essentially it is round, resembling a large yellow to russet-skinned apple, with a crunchy, grainy texture. It is juicy with an apple-like flavour. Best eaten slightly chilled. Good in fruit salads.
A hybrid indeterminate heirloom cherry tomato which bears beautiful ivory-coloured 1 cm (½ inch) fruits that ripen to pale yellow mid season and are deliciously sweet (without being sugary).
Soay are a primitive breed of sheep associated with the St Kilda Islands and with similarities to the mouflons of Corsica. These are likeable, intelligent sheep, and popular with environmentalists too as they will happily graze in woodland and on hillsides. They produce lean meat of good flavour, and their coloured fleece is used for many crafts.
Chinook, also known as Quinnat salmon, is the largest of the Pacific salmon, with the most intense flavour. The flesh has large flakes and high oil content. Coho is smaller and has paler flesh. Sockeye, also known as king salmon, has a four year life-cycle which contributes to the meatiness of its flesh, which is dense and velvety and turns deep red before spawning. It is considered good for tinning purposes. Pink is leaner and milder in flavour and is the favoured salmon in the United States.
