The king crab, in particular the red king crab, is an enormous crab from the Northern Pacific, weighing up to 10 kg (22 lb) and with a span from claw to claw of up to 3 meters (10 ft). These crabs have meat with a sweet taste which is said to be better than lobster. They are fished in cold waters such as the Barents Sea, and even despite the flavour the fishermen hold them in low regard, accusing them of damaging other marine life on the seafloor. They are imported into the UK from Norway. The meat is often processed or tinned and is white with red fringes
A name for the banana prawn, a yellowish-beige translucent king prawn with no obvious spots or bands, fished in the waters of tropical northern Australia. There are two types, white, with white legs and redleg with red legs. They are found around 25 cm (9½") long. The flesh is sweet and quite soft.
Common in the Alps and found in the UK. It is commonly roasted with cabbage or braised in chartreuse. Grey partridge are more numerous in the United Kingdom and have a more delicate flavour than the less common grey partridge.
Originally the colour of Red Leicester came from carrot juice, but these days it all comes from anatto. It is a hard, mild, pressed cow's milk cheese which is rather rubbery in texture.
Smaller than split peas, split red lentils cook down quite quickly into thick soups or curry. Like split peas, they are good cooked with a ham bone or bacon, with carrots, onions and celery. These are also good with caramelised onions, garlic, mustard seeds, turmeric and cumin. In south India they are most often cooked with fenugreek seeds, curry leaves and tamarind, while in Maharashtra they are likely to be flavoured with green chillis, tomatoes and fresh coriander (US: cilantro). They have a green skin.
Hog plum. A close relative of the mango native to the Amazon basin and used in making luscious ice creams.
Red mullet or surmullet. A high quality fish of a different family from the other (grey) mullets, and which has a far better flavour and lean, firm flesh. Its liver is highly prized. Do not confuse it with gurnard, which has a slightly paler colour. This fish may vary from pinkish-reddish crimson to rosy pink in colour with golden streaks and with two long barbels on the chin. Mullus barbatus is the smaller of the two and is of not quite such good quality. Mullus surmuletus is more properly known as surmullet and is larger.
Red Norland is a red-skinned variety of slightly floury potato developed in Nebraska, mainly used for salads and very good for boiling. It is also used for chips but does not bake well.
