The red-banded sea bream is a fish which lives among the rocks and is commonly found in the region of CadÃz. It is good baked, but needs added oil or bacon to prevent it from becoming too dry.
A pear with a shiny skin, speckled rather than russeted, turning from green with a red flush to yellow with an extensive red flush. When ripe the texture is soft and buttery. The flavour is good, and it is a very juicy pear.
A name for the saddletail seaperch, a striking red fish with no stripes or spots caught in the tropical waters of northern Australia over reefs and soft bottoms. Is usually found at around 70 cm (28") in size, though the ones in the picture are smaller and provides well-flavoured, flaky meat. It is sometimes sold as red emperor.
Bean curd fermented with rice wine and spices, coloured red or white and kept in brine. It has a strong cheesy flavour and is served as a side dish or condiment.
An old variety of all-purpose apple, not readily available. After storage until the spring it sweetens sufficiently to be eaten. When cooked it keeps its shape, making it good for pies and tarts. It benefits from long, slow baking and, dried, has a complex flavour. This late-season variety is harvested from mid-October in South-East England and is at is best from December to April.
