Fan mussel. A shellfish which grows up to 40 cm (16") long but which otherwise has the appearance of a large, slightly elongated mussel. The adductor muscle is edible.
Pentland Dell is a popular main crop potato. A long, oval potato with white skin and creamy white flesh. Suitable for chips (US: fries), mashing, roasting and baking. Little flavour. Close firm texture.
Pentland Hawk is a main crop potato suitable for most cooking methods, but particularly good for mashing and baking. Good keeping qualities.
Pentland Ivory is a main crop potato with very white skin and flesh. Mash or bake.
Pentland Javelin is a first early potato. Very white, smooth-skinned, milky, white-fleshed potato. Can be boiled or steamed. Suitable for salads.
Pentland Squire is a main crop potato. White-skinned, occasionally russeted, white-fleshed. Floury texture and good cooking qualities. Perfect for baking this variety is also good for boiling or mashing. Not recommended for salads.
