In the United Kingdom the bullhead or miller's thumb is a small variety of catfish with a large head, weighing not more than 450 g (1 lb). It has firm flesh with a mild flavour. The skin must be removed before cooking as it is tough and inedible. Bullheads are versatile as they can be poached, grilled, steamed or used in soups and stews. In the United States bullhead refers to any of a variety of freshwater fish, especially the bull-pout or horned pout.
