Easy cook rice has been steam treated to force some of the starch back into the grains. This guarantees separate grains when it is cooked.
It consists of crisp, flaky, sugared pastry raised around a filling of sultanas and currants amd flavoured with spices. A good Eccles cake is a great find. It originated in Eccles, now part of Greater Manchester.
A variety of green cooking apple from Northern Ireland, raised near Portaferry by a gardener called Mr Logan around 1800. It cooks down to a purée. This is a mid-season variety harvested from early-September in South-East England and is at its best from September to November.
Aitchbone. Beef cut. Cut from the upper part of the leg, between the buttock and rump, including part of the pelvis. This is a low priced joint because of the high proportion of bone. May be boiled or braised. In North America the cut is across the pelvis and includes the rump and top and bottom round.
