aitchbone

The aitchbone is a cut of beef from the upper part of the leg, between the buttock and rump, including part of the pelvis. This is a low priced joint because of the high proportion of bone. May be boiled or braised. In North America the cut is across the pelvis and includes the rump and top and bottom round. It is also known as edgebone.

Alaska

A cocktail consisting of 60 ml (2 fl oz) (or more) of London dry gin, 15 ml (½ fl oz) (or less) green Chartreuse, 15 ml (½ fl oz) dry sherry (optional), twist of lemon. Stir thoroughly with ice cubes and strain into a cocktail glass. Garnish with lemon peel.

Sablefish. A fish, in fact not a cod, from the northern Pacific. It is slightly rounded with soft, white flesh and a mild flavour. Often available smoked, it is sold both fresh and preserved.

Alaska Dungeness crab

The Dungeness crab is a delicious crab available in the United States. Dungeness is a port in Washington States, but the range of this crab extends down the west coast of the United States and Canada, stretching from Alaska to California. Typically these crabs grow to 20 cm (7.9 in). This crab is not considered to be at risk in any way, but concerns arise from the fact that they have been found in the Atlantic Ocean, far from their natural range.

The Alaskan king crab is an enormous crab from the Northern Pacific, weighing up to 10 kg (22 lb) and with a span from claw to claw of up to 3 meters (10 ft). The meat is often processed or tinned and is white with red fringes.
