"New herring." This refers to a particular type of pickle applied to the first herrings of season, usually late May. Fish caught in this season are plump and in good condition and are perfect for pickling raw. They are filleted, frozen to kill off any parasites (health and safety), put into brine and cured and then pickled in vinegar with onions and pickling spices, peppercorns and bay leaves.
