Trout caught in a river. Commonly this is the brown trout. It is often thought that there are multiple species of trout; brown, speckled, brook and river and so on. In fact they are all one, with the exception of the rainbow trout, and the differences in pattern are owing to environmental variations. The sea trout is a trout which spends a couple of seasons at sea, eating small crustaceans which make it a pink colour. They are all the same fish. The name simply comes from where it is caught or its appearance (which may be affected by its diet). It is coarser-fleshed than salmon.

Idiazábal

A round, hard cheese made with milk from Laxta and Carranzana sheep. It has a smooth, dense, ivory white paste and a hard, pale yellow rind. It is made on farms in the Basque country. This cheese is at its best from winter to summer and contains 45% fat (dry). The curds are uncooked and pressed. It is available made with vegetarian rennet in which form it is suitable for vegetarians. It may be found weighing 1-3 kg (2-7 lb). There is a smoked version which has a darker, almost orange rind. Coal fish, saithe, coley, called pollock in the US. A cheap, marine fish related to cod and not unlike it. It has darker skin and lean, sweet flesh which is a translucent greyish-pink rather than white but lightens as it cooks. This is a good, everyday fish which is good in white fish dishes or is used for making imitation shellfish products.
